Aren’t these kisses just the cutest things you’ve ever seen? The moist dates give the cakes a fabulous rich flavour and texture and the kids will love the piped buttercream. Feel free to play around with your spices in this recipe. Swap cinnamon for ginger, add some nutmeg or try vanilla powder.
Ingredients
125 g butter, softened
1/4 cup 50g dark brown sugar
125 g Natural Delight Medjool Dates, softened in hot water for 30 mins prior
2 tsp golden syrup
1 tsp vanilla extract
2 large eggs
1 cup plain flour
3 tsp cinnamon
1 tsp baking powder
- Vanilla buttercream
260 g icing sugar
200 g butter
30 ml milk
1 tsp vanilla extract
1 tsp vanilla bean powder
- To finish
30 g butter melted
3 Tbsp cinnamon sugar
Method
- Preheat the oven to 170°C.
- Grease a 12-hole x 3 tablespoon capacity patty pan tin.
- Beat butter, dates, sugar and vanilla with electric beaters until light and fluffy.
- Add eggs, one at a time and beat until combined.
- Sift in the dry ingredients and fold through until combined.
- Spoon half the mix into the 12 patty pans and, using wet fingers, press down gently to even out the mix.
- Cook for 7-8 mins or until a skewer inserted into the middle comes out clean.
- Cool until you can handle then move cakes onto a cooling rack and repeat with the second half of the mix.
- To make buttercream, place all ingredients into a stand mixer and whip until light and fluffy (approximately 7-10 mins). Make sure to scrape down the sides a couple of times to incorporate all of the icing sugar.
- Once cakes are baked and cooled, slice any little swellings from the top so they are quite flat.
- Pipe a Tablespoon of butter cream onto half of the cakes then sandwich them.
- Brush the top of each sandwich with the melted butter and sprinkle with cinnamon sugar to finish.
Cooking Notes
- Best eaten within two days of cooking.
- There are so many options for what you may like to sandwich these date kisses with. You could add tahini or peanut butter to the butter cream mix as a flavour OR try whipped cream cheese icing with orange zest in it. Delicious!
- You are better off under rather than overcooking these cakes, so be vigilant when cooking. Set the timer for 6 mins and check from then on.
