These dairy free overnight oats will stay fresh for days in the fridge so mix up a big batch and serve it up as needed. The inclusion of the dates provides a refined sugar free sweetener, a significant amount of fiber and a variety of vitamins and minerals, including iron, potassium, B vitamins, copper, and magnesium. A great breakfast recipe that is easy, nutritious and one that will keep you full for a long period of time.
Ingredients
60 g Jumbo oats (or porridge oats)
1 tbsp Chia seed
6 Medjool Dates, pitted and roughly chopped
30 g Sunflower seeds
100 ml Orange
100 ml Kombucha (or water)
- To serve
1 Apple julienne (choose whatever is in season)
Coconut yoghurt
Toasted nuts (whatever is in the pantry)
Method
- Combine the dates, oats, and seeds in a bowl. Add the juice and kombucha or water. Mix well. Cover the bowl and place in the fridge or a cool place for 6-8 hours or overnight. If possible, take the soaked oats out of the fridge half an hour before you want to eat them, so they’re not too chilly. Loosen the oats a little with extra liquid if you feel they need it. Serve topped with apple, coconut yoghurt and toasted nuts.
Cooking Notes
- You could also choose to serve your oats with a milk of your choice.
- The overnight oats will keep in the refrigerator for five days.
